We’ve been very excited by
how receptive people have
been to what we’re doing.You know, I think we’re
in the prime spot for
this kind of idea, being
in the Lower East Side.I think people were, whether
they were meat eaters
or not, were just hungry
for that classic deli.The inspiration came
kind of naturally. I
grew up in New York,and then at a young
age, I went vegan.but I wanted to create
a classic New York deli,
with a vegan twist.– Now, I am a total lox
lover, and it may not
be the exact same thing,but it hits a lot
of the same points.It’s smoky, it’s got that
great fish bite to it.It looks like lox. It’s a
little translucent, and in
my hand, it feels fatty, andit has that same fish feel
that you expect out of lox.This is cream cheese and lox,
the New York classic —but vegan!– To make our Bowery, which is
our take on the classic bacon,
egg & cheese breakfast sandwich.We take a block of tofu, and
then we marinate it in our
secret blend of spices and oils,to give it that
kind of eggy flavor.So after it marinates, we bake
it in the oven, and what comes
out is our tofu turmeric egg.Next up, you have the
bacon. We take a block of
tempeh, and we slice it up.And then we marinate it in
another secret marinade.That one has to marinate
overnight, so that
it really gets that
smokiness that you expectfrom the piece of bacon.

out is our tempeh bacon.– It’s pretty ambitious to
claim that you’re making
a vegan Italian sub.Especially in New York;
some people are gonna
have some opinions.Let’s see how it stacks up.Wow. This is crazy. It
honestly tastes exactly
like an Italian sub.I was not expecting that.
And you know really, I
think it has to do withthis faux mortadella
that they have in here.It’s got like, it looks
like flecks of bean, that
look, give it that look oflike, the fat that you would
normally get, and on top of
that, it has the same spices.It has those same flavors,
has the same chew to it. It’s
really, really incredible.I absolutely love this.

Don't mess with my lox and cream cheese bagels! My favorite. Disappointed Chas didn't like the vegan BEC because I'm a big fan of tofu and tempeh. Have two vegan restos I visit semi-regularly so a big fan of vegan dishes…all the food here looked quite tasty. Excellent episode. 👍

This might not make sense to non-New Yorkers, but, as a native, I don’t think that the gutsiest move that they’re making is turning out a bunch of herbivore takes on omnivore classics, but rather that they’ve got the nerve to serve Jewish appetizing, Latino bodega, and Italian deli standards all under one roof! That’s a fight in my neighborhood!
Just kidding. Nobody fights in my neighborhood. We’re all thoroughly gentrified.

I had the Italian sub this weekend while visiting (took it to the airport the next day for lunch while waiting for my plane). It was SHOCKING GOOD!! I don't think ANYONE would think this is vegan if they weren't told. How do they do that? Thank you Orchard Grocer!
