today we are preparing soya butter masala, a delicious and creamy soya chunks curry ingredients & quantities are listed in the description box and at the end of the video add 1 liter water to a wok or kadhai and keep it for boiling on high heat in this bowl, we have taken 1 cup soya chunks and 1/4 cup soya granules when the water comes to a rolling boil we will add them to the water now we will put the soya chunks and granules in the boiling water and boil them until they become somewhat soft keep the heat on medium and keep stirring in between after 2 minutes the soya chunks are soft we will strain out the water and wash them well under running water now squeeze out the water from the soya we will now marinate the soya put the soya chunks and granules in a large bowl add the hung curd,1/2 tsp red chilli powder, 1/2 tsp garam masala, and 1/2 tsp salt mix well cover with a lid and let it marinate for 15 minutes while the soya is marinating heat 1 tbsp oil in a pan keep heat on medium when oil is hot reduce heat to low and add 1/2 tsp jeera, crushed black cardamom, green cardamom, cinnamon, peppercorns and cloves saute for 15-20 seconds now put in the garlic, ginger, cashew nuts, chopped onion, and tomatoes mix well and cover with a lid when well mixed. keep the heat on low and cover with a lid cook until the tomatoes turn soft and keep stirring in between after 10 minutes the tomatoes have turned soft remove to a bowl and allow the mixture to cool completely while the roasted ingredients are cooling, we will roast the marinated soya. heat 1 tbsp oil in a pan on medium heat when oil is hot reduce heat to low and add the marinated soya we will roast this until the water dries up and they turn a shade brown. keep the heat around high and reduce as needed the water has dried out now we need to roast them. keep stirring constantly the soya is roasted. remove to a bowl keep this aside and puree the now cooled roasted spices until they turn to a fine paste remove the puree to a bowl. add 1/2 cup milk to the blender jar to remove the adhering puree and transfer to the bowl do not add water to this. mix well we will prepare the curry or sauce now keep a pan on medium heat. put in 1 tbsp desi ghee & 1 tbsp butter and let them melt then reduce heat to low and the bay leaves and 1/2 tsp red chilli powder stir a few times and add in the puree raise heat to medium and roast for 2-3 minutes however, once the puree is roastedl reduce heat to low and put in 1/2 tsp garam masala, 1/2 tsp salt, 1/2 tsp turmeric powder, and 1 tsp coriander powder stir roast the mixture on low to medium heat for about 5 minutes. reduce heat as needed if the curry at any time feels thick add milk to thin it we will add 1/4 cup milk at this point as the curry is a bit thick mix well the masala is roasted. add the roasted soya and stir a few times add the kasuri methi. stir cook for a minute. keep heat on low now put in the fresh cream and the hara dhania.
