Today I will be making lentil vegetable soup. This is very healthy and very satisfying dish. Great for lunch served with bread. This recipe will serve 3-4. For this recipe we need: 1/2 cup of lentil, which I have already washed and soaked for an hour. And as you see it has became almost double in volume. 1/2 cup of chopped green beans 1 cup of chopped carrots 1 cup of chopped celery And 3 medium size tomatoes, chopped. About 1/2 inch of ginger, thinly sliced. 1.5 teaspoons of salt 1/2 teaspoon of turmeric 1/4 teaspoon of black pepper 2 tablespoons of clarified butter or ghee 1/2 teaspoon of cumin seeds 1/2 teaspoon of garam masala Freshly squeezed lemon juice to your taste. And 3 cups of water. Let’s get started, and first we are going to add the water. Lentil Green beans Celery Carrots Tomatoes Ginger Turmeric Black pepper And salt. And open the heat on medium high. And close the pressure cooker. So as it comes to boil we will put the pressure and let it cook for about 7 minutes. Dal has come to boil and as you see steam is coming. So we are going to close the pressure and lower the heat to medium. And cook for about 6 minutes. You don’t have to make the soup in pressure cooker you can cook it in a heavy bottomed pan. It will take instead of 7 minutes it will take 30-40 minutes. So as you see pressure cooker is just a time saving device. This has been about 7 minutes so I am going to close the heat. But do not open the pressure cooker until all the steam has escaped. To make it little faster you can put this under running cold water. But still make sure the steam is gone and then open the pressure cooker. So steam is gone and I will open the pressure cooker but I did ran under the cold water. So but still it’s little bit left. And it’s looking really good. As you see you can see all the vegetables. And soup is little bit watery but as it becomes cold this becomes thick. So if you think that soup is too liquidy you can cook little bit more in open pressure cooker so water will evaporate. To me it looks very good. So I am going to make the seasoning to add in the soup Heat is on, medium high. I am going to add the clarified butter or ghee. Butter is hot, you can add the cumin seeds. And as you see cumin seeds are splattering. And now we are going to add this in our soup. And add the garam masala. Mix it well. So soup is ready to serve. And you add some lemon juice just in your serving bowl. Soup is ready and I am ready to serve this. I like this chunky soup. For winter it’s really good. Soup is looking great. I am going to serve this piece of bread with little bit lemon juice. This is my husband’s lunch today. It’s very satisfying. I hope you will enjoy this soup.
