Healthy Asian Chicken Salad Lettuce Cups


– Why buy a boring salad at the deli when you can easily make
an incredible meal quickly? Stay tuned for the recipe to these Asian Chicken Salad Lettuce Cups. (upbeat music) Hi, welcome back to another recipe that will easily add a little variety to your lunch routine. First thing we’re gonna do
is make the asian dressing. In medium bowl or inside of a jar so you can store is right away, I’m going to combine
rice vinegar, soy sauce, sesame seeds, brown sugar, a little fresh ginger that’s been grated, garlic clove that I’m also gonna grate and some sesame oil. Sure you can use store bought dressing, but this recipe is
great for salads, wraps, to marinate chicken and then grill it. It’s super versatile and you can keep it in the fridge for about two weeks. Today I’m saving a ton of time by using some rotisserie chicken
meat that I’ve chopped up. In a pinch you can use canned chicken as well for this recipe. So let’s place the chicken
inside of a large bowl and add some mandarin
oranges, chopped celery, carrots, cabbage, almonds, green onions, little salt and pepper. Just by looking at the
ingredients in this bowl you know it’s gonna be a really good and really crunchy salad. In the bowl I’m going to add
half of the asian dressing. Let’s give this a quick toss to combine. All you have to do is use some
washed green lettuce leaves as your cups and fill them. For a delicious office lunch
you’re gonna do the same thing, but you’re going to grab a lunch container and with some lettuce leaves at the bottom you’re going to make as a base or the cup. And then top it with the
delicious chicken salad. The chicken salad can
be made ahead of time and stored in the fridge for a day or two. I recommend that you fill the lettuce cups the day you’re packing this for lunch.
