Welcome to Lata’s Kitchen We can make many dishes with potatoes Dum Aloo is a very delicious party dish Today I’m going to make Dum Aloo, Lets see
the ingredients required for making this Potatoes – 4 medium sized,
washed, peeled and cut into fours Tomatoes – 3 Yogurt – 1/2 cup Oil – 3 tbsp Watermelon seeds – 2 tbsp,
soaked in water for 3 hrs Cumin seeds – 1/2 tsp Asafoetida – 2 pinch Ginger – 1 inch piece, grated Green Chillies – 2, cut lengthwise Dry Fenugreek Leaves – 2 tsp Paprika (Kashmiri Mirch/Degi Mirch) – 1/2 tsp Salt – 1 tsp, adjust to taste Garam Masala – 1 tsp Turmeric Powder – 1/4 tsp Coriander Powder – 1/4 tsp Cilantro – 2 tbsp, chopped Oil for frying Potatoes Lets start making Dum Aloo First we’ll deep fry the potatoes Heat oil in a wok Oil is heated, Turn gas
to low, and add potatoes Fry on low heat till they are golden brown In the meanwhile, we’ll blend tomatoes
and watermelon seeds for gravy Add tomatoes and watermelon seeds to the
blender jar and blend into a fine paste Flip the potatoes often Paste for gravy is ready,
take it out in a bowl Potatoes should be crisp
outside and soft inside They are getting golden brown They have turned golden brown, now
take them out on a paper towel Now we’ll prepare gravy for dum aloo Heat oil in a wok Oil is heated, now add the cumin seeds Add asafoetida Add paprika Add ginger Add green chillies Add tomato paste Saute this paste Add turmeric powder Add Coriander powder Cook untill oil starts to separate Watermelon seeds gives a very nice
texture to the gravy, You can also use khas khas
instead of watermelon seeds Oil has started to separate
out, add dry fenugreek leaves Add yogurt Cook it for few minutes Oil has separated out, now add garam masala Add salt Add about 1 cup of water Cook it for 2 minutes Turn gas to low and add
fried potatoes to the gravy Cook it for about 5 minutes Dum aloo are ready, turn off
the gas, garnish with cilantro Take out into a serving bowl Dum Aloo are ready These are very tasty You can serve it with naan,
