Today I will be making badam burfi or you can say almond candy. You can make with this recipe about 16-20 pieces. It depends what size you decide to cut. I need 1 cup of almonds. 1 cup of sugar 2 tablespoons of ghee or clear butter Pinch of cardamom powder. About 1/2 cup of milk or just enough so you can blend the almonds. I have soaked the almonds about 20 minutes back in hot water. So they are ready to be peeled. So I am going to peel them. My almonds are all peeled. So I will blend it with sugar and milk. Going to use my blender. Put the almonds. And sugar right in this. So it get really mixed well. And some milk. Almond paste is ready and looks good. Frying pan is on, medium. And I am going to add 2 tablespoons of ghee. And just wait till ghee is melted. Ghee or you can use unsalted butter. Ghee is melted. So I am going to add the unsalted melted almond paste. And mix it. Just keep stir frying and it should be on the medium heat. It should take about 8-10 minutes. It has been about 6 minutes and you really have to stir all the time. It will take about 3-4 minutes. Everything will come together and badam will start leaving the sides. So this is the time I am going to add pinch of cardamom. It has been another 3 minutes. And as you see it has start leaving all the sides. And it’s time to close the heat. But keep stirring this for another few minutes. So it becomes like dough. So this is ready. As you see it is soft but as it gets cool and dry up. So I am going to put little butter in my plate. So when I put the almond paste on it, it won’t stick. And just spread it. I like to cut the square piece so I am just going to make it like a square shape. I like little thick. Almond badam burfi it’s very stable and it doesn’t go bad very fast. Leave it out for a week or refrigerate for months. It will take half an hour when it cools off and that is the time you should cut them in pieces. This is all set and ready to cut. So I am going to just cut. And I think what I told you before that it will make 16-20 pieces. Looks like it will make lot more. It looks really good and I am really ready to try.
