Hello, I am Madhura and welcome to MadhurasRecipe Marathi Let’s see how to make soya chunks masala today. To begin with heat up water in a pan. Add 1 cup soya chunks. You can get these easily in the market. Add few whole spices. A cinnamon stick, 4-5 black peppercorns, cloves, bay leaves. Add a little salt too. The reason behind adding whole spices is that soya chunks are a little bitter. To reduce their bitterness & to infuse the flavor of fresh whole spices in it. For that we are adding whole spices while boiling these. Cover & steam for about 4-5 minutes. I have cooked these soya chunks well for about 8-10 minutes. These have puffed up really good. What to do now is take a bowl & drain water in it. No need to squeez soya chunks. You can keep this as it is. Soya chunks are ready. Let’s go ahead with gravy. Heat up oil for that. Add 1 big sliced onion & fry until onion turns light golden. Onion has begun to turn light golden. Add 1 finely chopped tomato & 3 tsp melon seeds. You can add cashew nuts or almonds instead of melon seeds. Mix well & fry for about 3-4 minutes. Tomatoes are cooked nice & soft. Turn off the gas & let it cool down a little. The mixture has cooled down well. Transfer it into a blender jar & blend it into puree. Do not use water or use minimum water while blending. Tomato has enough moisture. Try to avoid using water. The masala paste is already. Heat up 4 tsp oil in a pan. Transfer the paste into oil. Mix the masala & fry well for about 3-4 minutes. After frying the masala well Add 1 tsp ginger-garlic paste, 1/4 tsp turmeric powder, 1 tsp garam masala, 1 tsp coriander powder, 1 1/2 tsp red chili powder. This is bedgi mirchi powder. Sabzi doesn’t taste too pungent But gives nice color. Mix well & fry until masala releases oil for about 2-3 minutes. When masala is fried well, when it begins to release oil add hot water. Do not add lot of water. As we haven’t drained water from soya chunks. They will begin to release water after adding in gravy. So use minimum water. You can see the color & texture of gravy. Add salt. Add salt carefully as we have added in soya chunks. Mix well. Add boiled soya chunks & mix well. Add 1 tsp kasuri methi that gives nice flavor to this dish. Cover & cook on medium heat for about 7-8 minutes until flavor of masala is absorbed in chunks. I have cooked soya chunks masala for about 7-8 minutes. Fantastic color!! Let’s see texture now. This is perfect hotel style gravy. Nice color, texture. Let’s take out a little gravy & check. Masala is absorbed well inside if you follow this procedure. It’s bitterness is noticeably removed.
